Chicken Shawarma Bowls
I always love a good salad but I need my salad to have lots of components to it to feel satisfying. The other day I came up with this delicious salad bowl and knew I had to share it with you.

Start with cooking the chicken. You can buy a rotisserie chicken and shred it. I put 2 chicken breasts in the Instapot with 3/4 cup chicken broth, 2 TBSP shawarma seasoning and cooked on high for 30 minutes.
While the chicken is cooking I drained a can of chickpeas, put them on a cookie sheet. Drizzled them with olive oil, salt and pepper and roast them for 30-45 minutes at 400 degrees.

I cut up 1 sweet potato and some cauliflower and roasted that with the chickpeas. I put olive oil, salt and pepper them. They also roast at 400 degrees for 30 minutes.

Once the chicken is done, shred it. Fill your bowl with lettuce top with cauliflower, sweet potatoes, chicken, roasted chickpeas and top with a garlic sauce or curry fig dressing and enjoy!
Recipe: Serves 2
2 chicken breasts, cooked with shawarma seasoning
1 sweet potato, roasted
2 cups of cauliflower, roasted
1 can of chickpea (I use 1/2 cup on my salad)
2 cups spinach
Garlic dressing or curry fig dressing
