Butternut squash black bean chili

This might be my new favorite recipe.  It is delicious!  This chili provides a great source of vitamin A and protein.  This is a meatless chili so it’s perfect for your next meatless Monday meal!

Butternut squash and black bean chili

1/2 onion, diced

4 cloves of garlic

2 TBSP olive oil

1 butternut squash, cubed

1 can of chicken broth

2 cans of stewed tomatoes (I used 1 can of fire roasted and 1 can of tomatoes with spicy red peppers)

1 can of black beans, rinsed and drained (to make it seem meatier use 2 cans)

1 TBSP chili powder

1 tsp cumin

In a pan saute the onion and garlic in the olive oil for a few minutes.  Add in the squash and let sautee 3-5 minutes.  Add in the rest of the ingredients and bring to a boil.  Once it boils, reduce to a simmer, cover.  Let simmer for 30 minutes.
