Chicken stir fry
Serves 4
1 package of boneless, skinless chicken breasts
Olive oil
Frozen stir fry veggies
Rice
Put chicken in a Ziploc bag with 2-3 TBSP olive oil, salt and paper. Toss around until the chicken is well coated. Pound chicken until all are the same size.
Preheat oven to 350 degrees. Put pan on stove on medium heat and get it warm. Use 1 TBSP olive oil or Pam spray in the pan. Once pan is hot put chicken in pan. Cook for 3 minutes per side. Possible longer depending on thickness. We pound ours pretty thin. Once you have cooked the chicken on 3 minutes per side put in the oven and cook for 3 minutes per side. Once done let chicken rest while you cook stir fry veggies and rice.
You can use microwavable veggies and rice.
Honey garlic sauce:
in a saucepan combine 4 cloves of garlic, minced, 1/4 cup chicken broth, 1/8 cup soy sauce, pepper, 3 TBSP honey. Cook 5 minutes or until warm. Add in 1-2tsp of cornstarch to thicken the sauce. Whisk until cornstarch is incorporated. Let sit for a few minutes to thicken. Use sauce over veggies and rice.
