Coconut Cream Pie Overnight Oats

1/2 cup oatmeal

1 tsp chia seeds

1/4 cup coconut milk or coconut cream

1/4 cup water

1/3 cup coconut yogurt

1/2 tsp coconut extract

2 TBSP unsweetened shredded coconut

Put all ingredients in a bowl and stir to combine. Refrigerate for 2 hours or up to overnight. Stir and add more milk if too thick. Top with toasted shredded coconut and/or banana.
