Grilled Chicken Quinoa Salad

Serves 2

8oz of grilled chicken

1/4 cup chopped walnuts

1/2 cup quinoa

1/4 cup chopped red onion

3 cups spinach

a little less then 1/4 cup of olive oil and balsamic vingear

1/2tsp honey

1/2tsp Dijon mustard

1 garlic clove

In a pan bring 1 cup of water to a boil, add 1/2 cup quinoa turn heat to a simmer, covered and cook 12 minutes.

While quinoa is cooking in a bowl toss together spinach, red onion and chopped walnuts. In a separate bowl whisk together honey, oil, vinegar, Dijon mustard and a minced garlic clove. Whisk well.

When the quinoa is done cooking toss with with the spinach mixture and dressing. Put 1/2 of the mixture on a plate and top with 4oz of grilled chicken.
