Healthy Chocolate Chip Banana Muffins

The other day I had a bunch of bananas that were going bad and I didn’t want to throw them away so I created this delicious and healthy muffin recipe.  These muffins are gluten-free but if you don’t want to use gluten-free mix you can use regular baking mix (like Bisquick)

Here is the recipe:

Healthy Chocolate Chip Banana Muffins

3 ripe bananas

1/2 cup almond milk or skim milk

1 tsp vanilla

1 TBSP sugar

1 egg

1 1/2 cups gluten free baking mix (I used Bob’s Red Mill)

1/2 cup chocolate chips

Mix everything together in a bowl.  Spray a muffin tin with non-stick spray and pour muffin mix into muffin tins filling about 1/3 of the way full.  Bake in the oven at 350 degrees for 15 minutes or until done.

Healthy Chocolate Chip Muffins

Store in the refrigerator.  ENJOY!
