No Added Sugar Pumpkin Muffins

1.5 ripe bananas, mashed

2 eggs

1 cup pumpkin puree

1 TBSP pumpkin pie spice

1/2 tsp cinnamon

1 tsp vanilla extract

3 TBSP melted coconut oil

1 tsp baking soda

1 1/2 cups gluten free 1 for 1 flour

In a bowl mash the bananas, then add in the pumpkin, melted coconut oil, eggs and vanilla. Mix well. Stir in spices, baking soda and flour. If the mixture is too thick add a dash of almond milk. Grease 12 muffin tins and put batter in the muffin tins. Bake at 350 degrees for 15 minutes.

Makes 12 muffins. Serving size is 1 muffin
