Peanut butter mocha chia pudding
Not sure what to eat for snack today? I give you my favorite chia pudding. This is on weekly rotation for my snack list. It tastes like dessert and is super easy to make. This recipe is perfect for meal prep. The recipe is for 1 serving so just double, triple or quadruple the recipe so you can enjoy this delicious snack for multiple days.
Peanut Butter Mocha Chia Pudding

1/2 cup coconut milk
2 TBSP brewed coffee
1 1/3 TBSP chia seeds
1 1/2 tsp peanut butter
20 grams chocolate protein powder OR 10g of cafe latte protein and 10g of chocolate protein powder
Add all ingredients to a bowl and mix well or add to a blender and blend well. Put in the refrigerator overnight or minimum 3 hours. Enjoy your snack time!

21g carbs
10g fiber
15g fat (depends on your coconut milk)
26g protein
