Fall is officially here! The leaves are turning colors, the weather is getting cooler and pumpkin is in everything! Pumpkin Spice Latte, pumpkin beer, pumpkin muffins……etc. I love pumpkin so I thought why not add it to my favorite healthy snack. Peanut Butter Bites. I played around with the recipe and here it is-for you pumpkin lovers out there-a healthy treat you an indulge in.
Pumpkin Peanut Butter Bites
1 1/2 cups of dry oatmeal
1/2 cup canned pumpkin
1/2 cup peanut butter
1/3 cup honey
2 TBSP vanilla protein powder
1 tsp vanilla extract
1/4 tsp cinnamon
1/2 tsp pumpkin pie spice
1/3 cup of mini chocolate chips
Mix everything together. Use a 1 inch cookie scoop or 1 TBSP make into balls. Refrigerate 2 hours and enjoy!
These treats are around 100 calories and can be stored in the refrigerator or freezer.
