Pumpkin Pie Overnight Oats
It’s getting colder out which only means 1 thing-fall is on the way! All the coffee shops have had pumpkin drinks out for weeks so let’s join them with this delicious pumpkin flavored oatmeal.
Now is the perfect time for this Pumpkin Pie Overnight Oats. It’s pumpkin, cinnamon, spice-all those fall flavors rolled into overnight oats. I think it’s still perfect for overnight oats because it’s not super cold out yet so you can still eat this and enjoy the taste and weather!

Pumpkin Pie Overnight Oats
Serves 1
1/2 cup oatmeal (quick 1 minute oats)
1/2 cup almond milk (any milk will work)
1/3 cup pumpkin puree
1 TBSP maple syrup
1 TBSP chia seeds
2 scoops Collagen-9 or 1-2 scoops protein powder
1 tsp cinnamon + pumpkin pie spice
2 TBSP pecans
Put everything but the pecans in a bowl and mix well. Store overnight in the refrigerator ( or at least 1 hour). In the morning, stir and top with pecans.
