Roast beef+veggies

serves 4 with lefovers

3lbs beef roast

4-5 yuken gold potatoes

4-5 whole carrots

1 yellow onion

beef broth

In a slow cooker put the beef roast and 1 cup of beef broth. Cut and peel potatoes, carrots and onion into chunks. Put veggies on top of beef roast. Sprinkle with salt and pepper.

Cook on low 7-8 hours. You might need to add more beef broth.
