Sausage and roasted veggies
This is a 1 pan meal that cooks in 30 minutes and is super easy.
4 sausages or brats
1 butternut squash ( use whatever veggies you like)
10-15 brussel sprouts (use whatever veggies you like or have in your fridge)
Cut your veggies into bite sized pieces. Drizzle with olive oil and stir around so all pieces are coated. Sprinkle with salt and pepper. Put on 1/2 a baking sheet. Roast at 375 degrees for 20-30 minutes.
While the veggies are roasting cut your sausages/brats into slices. When your veggies are halfway done take the pan out and put the sausages/brat slices on the other half of the pan. Cook for 10-15 minutes.
For meal prep you can roast more veggies and brats and eat them the next day.
