Shrimp Fajitas
Serves 4
1 bag of shrimp-I buy wild caught, tails off, shelled and devained. Medium in size
Tacos seasoning
Red pepper
1/2 a purple onion
Rice
Cabbage or lettuce
Black beans
Avocado
Salsa
Thaw the shrimp then toss with 1/2 a packet of taco seasoning. Cut your onion and pepper into strips.
Put 2 TBSP olive oil in the pan and sauté the pepper and onion 5 minutes. Take the veggies out and put on a plate. Put shrimp in. Cook 3 minutes. Add veggies back toss and cook 2 minutes.
Serve with cabbage/lettuce, salsa, avocado or guacamole and rice.
Optional to use corn or flour tortilla shells or skip those and enjoy some chips and salsa
