Skinny Banana Chocolate Chip Muffins

These muffins are family approved and so delicious!!  Pick a protein to eat with them and you are all set for breakfast, lunch or snack time.  These muffins are also low in sugar and can be made gluten free.

 

Skinny Banana Chocolate Chip Muffins

1 cup oatmeal

1 cup white whole wheat flour or gluten free flour (for this recipe I used King Arthur GF 1 to 1 flour)

½ tsp baking powder

½ tsp baking soda

1 tsp salt

Dash of cinnamon

Dash of nutmeg

2/3 cup apple sauce

¼ cup sugar

2 eggs

1 TBSP vanilla extract

2-3 ripe bananas, mashed

1/2 cup mini chocolate chips

In a bowl mash the bananas then add the apple sauce, sugar, eggs and vanilla extract.  Stir well.  Add oatmeal, flour, baking powder, baking soda, salt, cinnamon and nutmeg.  Stir well.  Add the chocolate chips and stir.  Put ¼ cup of mixture into a muffin tin.  Bake at 350 degrees for 17-20 minutes.  Makes 12 muffins.
