Tropical Overnight Oats

The snow is melting and it’s getting a little warmer outside…..I mean I live in the midwest so anything over 30 is warm this time of year 🙂

Plus with spring break around the corner it has me thinking of all things tropical.

Today I created this delicious tropical overnight oats and I want to share the goodness with you. I hope you enjoy it!

Tropical Overnight Oats

1/2 cup oatmeal

1 TBSP chia seeds

30g vanilla protein powder

1/2-3/4 cup coconut milk

shredded coconut

1/2 cup mango

Put the oatmeal, milk, chia seeds and protein powder in a bowl and stir together. Put in the refrigerator for 30 minutes or up to overnight. Take it out of refrigerator when you are ready to eat, you might need to add a splash of milk to loosen the oats. Top with 1-2 TBSP shredded coconut and 1/2 cup mango.

You could also add banana and/or pineapple.
