It’s almost Valentine’s Day! Do you have any plans? We usually stay in and cook up something that is healthy and delicious. YES-healthy can also be delicious. Here is a round up of some of my favorite recipes that you can make for your sweetie on Valentine’s Day.
Strawberry Coconut Smoothie
Start the morning off with this delicious strawberry coconut smoothie.
1 cup of water
1/3 cup light coconut milk
1 cup of frozen strawberries
1/4 cup plain greek yogurt
1 scoop vanilla protein powder
dash of coconut extract
sprinkle of coconut flakes
Put everything together in a blender and blend until smooth. Top with coconut flakes.

For Supper try this Steak and potato salad:
2 steaks
6 small potatoes
lettuce
red onion
tomatoes
blue cheese
Balsamic vinaigrette dressing
Marinate streaks in dressing for 30 minutes then grill them to your likeness. Chop the potatoes into small pieces and roast them in the oven with a drizzle of olive oil at 350 degrees for about 20 minutes. While the steaks rest and the potatoes cook, assemble the salad. Put a large handful or two of lettuce on each plate. Top with a bit of chopped onion and tomato. Add 2 TBSP blue cheese to salad. Once potatoes are done add a few to each salad and top with sliced steak. Drizzle 2 TBSP of dressing over top. Makes 4 servings
It’s Valentine’s Day so you must have dessert!! Chocolate dipped strawberries are super easy to make and taste delicious!! Melt chocolate (dark, milk or white) in the microwave on 50% power for 1 minute. Stir and continue cooking until melted. Once chocolate is melted, dip strawberries in the chocolate then lay them on wax paper until chocolate is hardened. Once the chocolate has set store in the refrigerator.
