It’s almost Valentine’s Day! Do you have any plans? We usually stay in and cook up something that is healthy and delicious. YES-healthy can also be delicious. Here is a round up of some of my favorite recipes that you can make for your sweetie on Valentine’s Day.

Another breakfast idea or snack idea is my Banana muffins. Add in mini chocolate chips to make them extra Valentine’s-ish. You can find that recipe here: https://personaltrainingwithlisa.com/gf-banana-muffins/
For lunch make this hearty and filling Butternut squash and black bean chili. You can find the recipe here: https://personaltrainingwithlisa.com/butternut-squash-black-bean-chili/
For Supper try this Steak and potato salad:
6 small potatoes
Balsamic vinaigrette dressing
Marinate streaks in dressing for 30 minutes then grill them to your likeness. Chop the potatoes into small pieces and roast them in the oven with a drizzle of olive oil at 350 degrees for about 20 minutes. While the steaks rest and the potatoes cook, assemble the salad. Put a large handful or two of lettuce on each plate. Top with a bit of chopped onion and tomato. Add 2 TBSP blue cheese to salad. Once potatoes are done add a few to each salad and top with sliced steak. Drizzle 2 TBSP of dressing over top. Makes 4 servings
It’s Valentine’s Day so you must have dessert!! Chocolate dipped strawberries are super easy to make and taste delicious!! Melt chocolate (dark, milk or white) in the microwave on 50% power for 1 minute. Stir and continue cooking until melted. Once chocolate is melted, dip strawberries in the chocolate then lay them on wax paper until chocolate is hardened. Once the chocolate has set store in the refrigerator.
I hope you have a lovely Valentine’s Day! Tell us what recipe you are going to be trying this Valentine’s Day. Enjoy.
