Veggie packed scrambled eggs
Serves 1
1/2 cup chopped veggies
3 eggs
Salt
Pepper
Olive oil
Put 1 TBSP olive oil in a pan on medium heat. Add your veggies and sauté. While veggies are sautéing crack eggs into a bowl, add salt and pepper and whisk. Once veggies are soft or to your doneness add in eggs, stir around until done.
Serve with toast, pancakes, fruit….etc.
